Where are your vegetables?
I am just slapping together mac n cheese with peas and carrots for Teddy. I do this at least 3 times a week. I am so grateful he is eating at all.

My veggies were the peas and corn in the fried rice. :giggle: I don't normally do two starches in one meal, but the pasta salad was made last night, and I wanted to eat some of it... :wink5:

Yes, Tina. Dinner/supper still has to be made... :giggle:

The oven-fried chicken was passable, but could have been better. At least it wasn't too tough to eat. :wink5: Jim wants to carry the soup leftovers for lunch tomorrow, so I guess he wasn't too thrilled with it... ::)

I will post if it works, Dianna. I am copying something that we love that comes out of our local taco place. But those are darned expensive for what you get.
Tonight I pulled pulled pork out of my freezer. I reheated with bbq sauce and have buns at the ready. Then cheddar potato poppers and broccoli.

Well I got so busy cooking for the missionaries yesterday I didn't get any of the stuffed pork lol.  So today I'm having one of the steaks that were on sale when I went grocery shopping.  Of course until I do the dishes I'm not cooking anything lol.

Today I baked popovers for breakfast, lunch, and possibly, if they last that long, dinner.  Dinner will also include leftover dinner from the missionaries meal.  We do have fun when we get together.  It's nice to cook for a foodie.  One of our missionaries right now is a baker and it's great to talk to him about food and recipes.

The ham is becoming Congressional Bean Soup.  And I believe I have some jiffy corn muffin mix around here somewhere and there is some leftover macaroni salad in the fridge.  That should tide me over for today.  I love it when cooking stand double duty and helps to heat the house.

I fried some chicken thighs today and roasted some veges.  I started to buy a whole chicken since I heard Martha Stewart say she's never bought "just" chicken parts but I was still going to cheat and buy an already cut up chicken.   I thought better of that deal though.  A whole chicken is a bit cheaper (which I'm sure is why Martha buys the whole thing......NOT) but if we like thighs why buy the back and breasts and gizzard?
Title: Re: What's for dinner...# 44
Post by: Tina on Feb 01, 2013, 08:27:23 AM
Chicken thighs are my favorite parts.
Title: Re: What's for dinner...# 44
Post by: bestofour on Feb 01, 2013, 08:54:32 AM
Stew beef and rice and a kale salad for tonight.  We have enough chicken and veges left over for another dinner but because Johnny is a weirdo about leftovers I'm going to try and slip that in on him tomorrow night.  I want to get to the point where I can go to the grocery store one day a week so I can use the senior citizen discount,  I want to get something for being old, and if I can trick Johnny into eating leftovers I think I can do that.  Since we're both weird about frozen meat I have to cook what I buy pretty quickly.  Boy are we strange!!!

I'm making my very first pot of potato and leek soup.  It says to serve it cold but I'm going to serve it hot because I froze my hands underneath the cold water when I was rinsing the leek and potatoes.  They are so cold.  And at 63 in the house they aren't warming up.

Thanks for the reminder.

I understand what you are saying.  I had a pot of bean soup and I'm at the end of it so it's time to cook again.  Hopefully the london broil will last me several days.  Although, I love it so much that's probably a generous estimate.
Title: Re: What's for dinner...# 44
Post by: bestofour on Feb 22, 2013, 02:00:19 PM
Did Johnny like it? That is the main thing.

If you're asking if Johnny liked the spaghetti the answer is no he did not.  He ate it but when he was finished he asked what I had done differently because he didn't want to have to eat it again.  What I had done differently was to use a store bought jar of marinara sauce and added a little browned ground beef.  I loved it and ate it the next day for lunch.  He likes a little sauce with his pound of browned ground beef and of course no seasoning whatsoever in his sauce so guess I won't be doing that again.

But he didn't complain about the left over rice and left over asparagus the other night.

Post by: bestofour on Feb 22, 2013, 02:02:43 PM
Gosh duh, I can't remember the last time we had london broil.  Yummy.

If it's not raining too badly I'm cooking burgers on the grill with slaw and I'll bake Johnny a sweet potato.
Title: Re: What's for dinner...# 44
Post by: duh on Feb 22, 2013, 05:18:59 PM
Johnny sounds like the people at church where I go.  They are used to very plain food and if I do one of my special dishes for them I end up taking it all home with me.  Which is why I don't even bother to go to the pot lucks anymore.  I mean why bother.
Title: Re: What's for dinner...# 44
Post by: bestofour on Feb 22, 2013, 06:12:41 PM
Johnny won't even eat at church because he doesn't know what people have put in stuff.  He's not very adventurous when it comes to food.

Even though it's pouring rain I fixed burgers on the grill.  Yummy

I tucked a whole chicken in the crockpot. It was previously roasted so I ate chicken already with some veggies. If my older kids show up hungry later, there is plenty. And if not I will do something with the leftovers tomorrow.

Post by: bestofour on Feb 22, 2013, 09:35:47 PM
so you roasted it first and then decided to crock it?  I've never tried that.  Bone in?

I found out tonight after many years of baking Johnny a sweet potato once in a while that he "really doesn't care for sweet potatoes." One of  us has gone crazy.

Title: Re: What's for dinner...# 44
Post by: Tina on Feb 22, 2013, 09:45:24 PM
Yes, bone in. I roasted 2 a few weeks ago. I froze one and a half. We ate the second half a couple weeks ago. Today I decided to crock up the other. I will toss the skin and bones and have lovely soup makings or chicken and broth for a casserole this weekend.
I have tried to avoid freezing much cooked meat. It was hard to keep from freezer burning no matter how I wrapped it. But with the vacuum sealer, life is much better.

Sarah, lemon pepper chicken makes me think of Everybody Loves Raymond.  Have you ever watched that show.  It's the only thing the wife can cook and the husband doesn't like it.

I love eating from the garden.  Tonight it was squash, potatoes, roasted baby carrots, cucumbers in vinegar.  And of course chicken for Johnny.

I have seen it but I don't remember that being all that Debra can cook, though that sounds about right!  I'm still waiting for the garden to wake up - since we had snow on May 1st - and frosts for a week after that - everything is behind schedule.  Cherry tomatoes are just starting to turn.

For dinner tonight, I am thinking I will make some Asian Lettuce Wraps.  Not sure what I'm going to put with it though...

Title: Re: What's for dinner...# 44
Post by: bestofour on Jul 07, 2013, 08:37:21 PM
I get the grill really hot, then turn it down to low flame and grease it with olive oil, turn it back up to high for a few seconds then put the salmon skin side up for 2 minutes then turn it over for 5 minutes or until it's done.  It doesn't stick if you grease the grill after it's hot.

I never cook shrimp.  Not sure why that is but if I've ever cooked it I can't remember doing it.

Cooking shrimp is a little difficult because it's so easy to overcook it.  I won't eat it prepared in restuarants around here anymore because it's basically chewing gum by the time it makes it to the table.  I like my shrimp to be ... geez, what is the texture? almost crisp I guess, not rubbery and not mush.
