It seems we were running out of room in the other thread, so here's a new one where you can post your goodies. ;)   

Tonight I fixed a pork chop, mashed potatoes & country gravy, spinach topped with a hard-boiled egg and fried apples.  It really hit the spot on a very cool evening.    :yesssss:

Tonight I am making meat loaf and baked potatoes.  Need to have something Dan can get started since I will be running up to Tacoma today to get my niece.

Last night we had sloppy joes and pasta salad loaded with nasty peas, tomatoes, and black olives.

Tonight we're have szechwan shrimp with steamed veggies, served over rice.  Oh and I just pulled the last tray of chocolate chip cookies out of the oven.  Trust me, they are wonderful!

Tonight for dinner I made some tuna salad, then served it with quartered hard-boiled eggs and quartered tomatoes on the vine (from the store - YUK)!  :Whis:  Oh well, it was quick and easy.  :yesssss:

Last night we had meatloaf, Triss. Stouffer's, though, not homemade. Sure would like to have a recipe for a good homemade one. Will you share? :grinnnn:

I like Tuna salad, Patti. How do you fix yours? :) I need more fish in my diet...

Geesh, my tuna salad is nothing fancy, Dianna, I use the Solid White Albacore Tuna,  mayonnaise (Hellmann's), diced celery and a little bit of pickle relish.  ;)

Patti, yours sounds like mine except I use onion instead of celery... :laughpound:

I had a lady that lived next door to me years ago and she made the best tuna salad. Hers had macaroni in it. I lost the recipe that she gave me. While she lived there, she always brought me a bowl to eat when she made it for her supper. Sure miss it... :grinnnn:

Tonight is steak. I always do baked potatoes with that. And salads. It is simple but I haven't done a lot of cooking lately. I plan things then my family starts running the microwave before I am cooking. O even when I've already begun cooking. I would sure hate to toss these steaks out though.

Dianna,  Most of the time I use the lipton onion soup mix recipe minus the bread crumbs because we like it more moist.  This time I forgot to get that so I tossed in all kinds of spices, onion powder, garlic powder, minced onions, parsley, oregano, a couple of eggs and a healthy squeeze of ketchup.  Mixed that all in and baked it.  It was so much better than the onion soup mix and probably way less salt as well.

Tonight we are doing a whole chicken on the rotisserie.  I will make a bit of macaroni salad to go with and mashed potatoes and corn.

Thanks, Triss. I will look on the next box of Lipton's that I buy. I can't believe that I haven't noticed a recipe for it before on there. Usually though, if I have the soup mix, it is for the tater recipe. :542: Mmm, mmm, good! :licklips:

Tonight I made chicken tenderloins in mushroom gravy. Fixed some rice and some "rotten taters" (potatoes au gratin) to go with it... :licklips:

Last night we had brats and tonight it will be spicy chicken Quesadillas.  I love quesadillas!  If only Adam would make me that tortilla press then I could cut the tortilla time in half!  That would be so great.

We had Texas Style Chicken last night (chicken breasts smothered in melty colby-jack, jalapeņos, tomato slices, and crispy bacon) with garlic cheesy bread.  Adam always loves anything that involves bacon and dinner.  Tonight I'm trying out a new recipe for tilapia called Simple Ranchy Breaded Fish.  Pretty much fish dredged in ranch mix and then breaded. 

edit: I forgot to pull the fish out of the freezer so it is braised balsamic chicken instead, maybe I will serve it with garlic smashed potatoes and biscuits.

We had pintos, rice, cornbread, and honey-barbecue chicken strips for supper tonight. Sure was good, but I shouldn't have had the second helping.... :giggle:

Tonight, I just made some Shrimp & Chicken Stir-Fry over rice and it was delicious!  Of course, I usually like any dish that has rice in it or with it.  ;)

 :542:  Fixed corn chowder with corn from the freezer from last summer. Have enough for one more batch out there, then I have to wait for this year's crop.  A salad from Barleychown's garden mixed with mine, and BINGO! Lite, filling, time for a bike ride! :ThumbUp:

For some reason I am on a big chinese-food kick.  So the next two weeks of dinner will definitely be reflecting that.  Tonight I think we will have General Tso's chicken and crab ragoons.  It's a first for both recipes and I really hope they turn out good.  I love trying new recipes but am always a little nervous about how they will turn out.

The crab ragoons were really easy to make - I just didn't count on the recipe making 35 ragoons!  We ate on them until we were stuffed and still had a ton for lunch today! 

We had tortellini with garlic cream sauce (which was rather offensive to the taste buds) and I added a bunch of garlic powder, pepper, and salt (I never, ever salt anything except the occasional bread dough).  After that failed I cooked up some sweet italian sausage and FINALLY saved dinner.

That sounds really good, Penny. 

I have some yogurt "cooking" up in the oven right now (it's actually just sitting until it firms with the light on in there to keep it warm--I should just set the darn thing outside it's already 90* out there and I'm sure a lot warmer in the sun!).  Tonight I'm fixing up Grilled Asian Chicken with grilled corn on the cob slathered with tons of butter and salt.

Tonight we are having breakfast for dinner.  Waffles, sausage and bacons for the kids.  Eggs for any of them who want it.  Then Dan and I and maybe Patrick will have eggs benedict along with hash browns.

Tonight it is Chicken and Broccoli Alfredo.  We needed something quick since we drove an hour to Salina only to discover that the event we were going to do was canceled due to the severe weather.  So we put in gas (at 3.99/gal!!!) and drove back home.  Oh the joys of weather.

If it makes you feel any better, Dianna, I just looked at the nutrition info for the Chinese Lemon Chicken that I'm making tonight and the calories weigh in at 999 with 742 from fat.   :yikes: :yikes:  So, ummm, I'm thinking that our 2 mile bike ride might need to be a bit longer today.

Tonight is salmon with angel hair pasta and a lemon cream sauce.  Dan is making that.  I added in asparagus that will be cooked with garlic and a dash of balsamic vinegar and some muffins.  Apple pie for dessert.

Tonight we had a chicken stir fry.  Although it wasn't bad, it wasn't very good either.  Upset both Adam and Rachael's stomachs though.  (To be honest Rachael is a little copy-cat and is probably perfectly fine.)

IMPORTANT COOKING TIP OF THE DAY!

While making tortillas do not, I repeat, DO NOT,  :Smileystop: nuke a cup of water for 3 minutes, pour it onto the flour/shortening mixture and then eagerly shove your hands into the dough to mix.  :dummy: This will DEFINITELY result in very painful burns in the strangest parts of your hands and fingers (even the wrist!) - and the shortening will just amplify the burn and the pain.   :SlapSelf:



Now, hopefully, I will be able to finish the tortillas for a final product of Mexican Shredded pork enchiladas.

I am so glad that I am not a Sarah. Most of my knicks, bumps and bruises come from outside, not the kitchen. (knock on wood)
I'm thinking leftovers. i have chicken in the fridge but it will wait until tomorrow. I just can't get up the umph for cooking right now.

Tonight we finally had the 999 calorie lemon chicken.  It was really good, although I must admit it tasted more like lemonade chicken than lemon chicken from a chinese restaurant.  Everyone loved it, though, so next time I feel like dirtying up almost every bowl and pan in the kitchen, I'll make it again.

Just tossed a tator tot casserole in the oven.  I haven't made one in ages... Last time I had one was when I was 6 months prego with Lindsay and a friend came over to make it.  When I wasn't looking (ah, but I was) she bit a lot of the tator tots in half to get them to fit in the pan.  We aren't THAT good of friends.  And it certainly didn't help that both of her kids and herself was suffering from the stomach flu at the time.   :yikes: Four and half years later, I think I'm ready to try it out again.  What do you all put in TTCass?  I was looking online and some folks put in all sorts of stuff like Parmesan cheese, sour cream, cornflakes (GAAACK!), and peas (even worse!).

I've went pretty much vegetarian since I moved.  I do little pieces of meat like what you find in canned soup and stuff but that's about all unless I go out.  Which, I can't afford to do very often.

Last night was a quick throw-together dinner, tonight I'm thinking about trying a new recipe I found for grilled cauliflower.  :grinnnn: Also need to find new uses for radishes...I may have planted a few hundred too many. :Whis:

Tonight we're having pork loin on the BBQ.  A neighbor cut down a small dead apricot tree and the wood really gives meat an awesome flavor!!  We've been soaking it in water and then tossing it on the deflector on our propane grill.  My folks used to have a smoker and I am now reminded of a)how much I miss starting fires and b) how much better food tastes when wood is used.  Next grill won't be propane, if I have anything to say about it!!

Last night was Liver and corn. I LOVE liver! :542: I quick brown it after my onions are just about done and then dump a tub of sour cream in the pan and heat it through and serve over toasted bread. YUMMMMMMM!!

Tonight is beef soup/stew, or chili...haven't made up my mind.

I love liver too.  I sear it and then add in water and milk for a nice thick gravy then I place it over white rice with green beans a la tammy on the side.  Yummy. 

I'm not going grocery shopping until friday but I think I know what I'm having for dinner on Saturday.

Ewww! Liver is nasty.*insert gagging graemlin here* I have tried it several times, but it never makes it down my throat. It smells so good in the pan, but once it hits my mouth and I bite into it, it has to come out right then... :giggle:

Pintos are in the crockpot, rice is in the microwave, cornbread in the oven, and I am getting ready to try to fry some chicken tenders. Sounds like a good supper to me... :542:

Last night we had roast pork, fried potatoes and corn.  I planned on some spanish rice as well but for some reason it did not cook right.  I have a feeling I did not measure the water right.  I was really in the mood for it too.

So tonight... I have no idea.  I am thinking of fajitas so I can retry the spanish rice.

I'm making chicken and rice myself. But so frustrating -- I bought just last Sat. some basmati rice (its way lower in carbs). I went to use it and it has bugs!  :Vent: Now I have to use the 'back up' minute rice. Oh well, at least I had back up.

Oh I hate it when my rice gets bugs.  I keep mine in the freezer since getting a huge invasion of them in Nebraska.  I have not gotten any since doing that.

I'll have to start doing that.  I normally keep all my dry goods in an air tight container, but since moving, I don't have enough. At any rate, it wouldn't have helped in this case. I just bought the rice 3 days ago, just opened it today.. the bug had to have already been there when I bought it.

Last night was dinner out. The new-ish resort resturaunt here in town offers prime rib, mashed potatoes, veggies, fresh baked bread, soup and salad bar, and a scoop of ice cream for $9.99. Fantastic deal, and amazing food. I think it's going to become our once a week date.  :BigGrin:

Today I'll be working on putting together a few soups for the freezer, so we will be eating those.

Dianna, they are really good.  I guess I would say they are a mild pea?  I dunno how to describe it but they do come in pods like peas but are shaped more like lima beans.  You just boil the pods and then pop the edamame out and eat them.  Some people will put a little soy sauce on them.  They are a popular dish with sushi.

Tonight was basic for all the cooking I did today, the kids asked for spaghetti so they got Ragu.  No one but Patrick and I wanted pork tacos so it all worked out.

Let's see...last night was grilled steak, garlic mashed potatoes, and corn. Tonight will be leftover night, as I need more room in my fridge.

We stopped by Pizza Hut on the way in and picked up a large stuffed crust pepperoni pizza. :licklips: Jim will have some to carry to work tomorrow... :grinnnn:

We were in WIchita today, so we got Chipolte's.  One huge Barbacoa with black beans burrito for me.  It was good.  Yes, I was a pig and ate the whole thing.  It's a good thing that restaurant is over an hour away!

I made spaghetti last night. Ate some, put some in the fridge for lunches during the week, and put the rest in the freezer for another time.  I just haven't figured out how to cook for just one yet.. lol

I have a steak I put in the fridge to thaw yesterday that I think will be tonight's dinner. I will have to look at what is in the pantry to find something to go with it.

Oh yum Sarah.  I think I could have both of those for dinner!  I was going to bake today but ran totally out of time.

Tonight we are having leftovers.  There is some spaghetti, burritos, enchiladas and pork so everyone should be happy.

If memory serves me right, the chocolate covered cherries brought in $40 (5 dozen, selling at 6/$4) and the cookie dough truffles were the same price but a half dozen more, so $44.  I was told they were the first thing gone--Adam had my baskets I sent them in back by 10am and the sale started at 8:30.

I made pork taquitos last night (OMAC--made enough for 3 dinners).  After an hour and a half frying up those last night, I vowed to make something easy for dinner tonight.  Biscuits and gravy for us.  The weather just cooled off (all the sudden) and zapped all my plants.  Need to do something with all these tomatoes one of these days...

I decided today was a cooking day. I hadn't planned it to begin with but John had some specific cravings. He needs all of the nutrition he can get right now so cook i will. I purchased a turkey breast precooked yesterday. I boned and skinned it today and amd simmering those up and I sliced up the turkey. We will have turkey gravy on mashed potatoes (John's craving) and hot turkey sandwich (for me). Jonni will go mooch off of friends because she doesn't do turkey. Or she can have a bacon and avocado sandwich because I am cooking up bacon too. I will toss together a large pasta carbonara For other meals this week. I made deviled eggs for John as well. I might bake something as soon as I decide what sounds good. And I have sweet potatoes to bake up so I don't waste oven heat/space. I need soft food ideas for John that might perk up his appetite. He has developed a hiatal hernia. That is why 'soft' is in now.

Pinto beans, rice and ham and mustard greens.  Also I have had those soy beans, they remind me of peanuts.  I'm gonna try boiling some in salt water and see if they taste like boiled peanuts, YUM!!~

Soft foods that I like include:

Navy Bean Soup
Poached Eggs
Rice Pudding
Bread Pudding
Cheese Souffles
Puddings of course
Jello (only when I'm sick.  The rest of the time it doesn't interest me)
Ambrosia
Cream of Wheat
Grits with soft boiled eggs on toast
SOS or hamberger gravy over toast
Liver and onions over rice
pasta in a butter or cream sauce
lasagna
spaghetti with sauce
ravioli
chicken and dumplings
top ramen
That's all I can think of right now.

I'm soaking beans for navy bean soup tomorrow. 

Any one have a good southern corn bread recipe.  Mine are all locked up by that trojan horse virus  grrrh.?

Thank you. I have been banned from cooking liver in the house until John dies. He got very nauseous from three rooms away the last time I sauteed chicken livers. So I will wait on the liver. John is not too hot on pastas. For a guy who says he isn't a picky eater, I have avoided a lot of food items in  our menus due to his likes and dislikes. We have done a lot of soups and he is burning out on them.  I'm glad he still likes eggs. And the turkey gravy went over well tonight. I have a few more meals of that all made up. I have a house full of yogurt, cottage cheese and puddings for him. And a big bowl of pasta to satisfy my own craving.

Duh- My recipe for cornbread is simple and good! :ThumbUp: Here ya go!

Grease a cast iron skillet with crisco(or similar grease) and pre-heat oven to 350.

In a large bowl combine 1 and a half or 2 cups cornmeal, 1 cup(+ or -) self rising flour, and enough powdered milk to cover them. slowly add water until you have a batter slightly thicker than pancake batter. Pour in skillet and bake until edges are nicely browned. Turn oven to broil to brown top. Flip out on a plate or platter and slice. YUMMMM!!!

This is enough to make a BIG pan, but as long as you keep the proportions the same it will be fine. Hope you like it!

We are having vegetable beef soup for supper tonight. I just put the stew beef in the crock pot.

We are using up the leftover baked chicken from last night by having chicken salad, fresh greens(mustards as a bed for the salad) and fresh baked crusty bread. :542:

Tomorrow- Ham hock, pinto beans, and more bread- This stuff is GOOD!!! I'll post the recipe in a sec! :ThumbUp:

It is basically a ham bone.  It is great (and cheap) for flavoring soups.  I use them all of the time in my beans.

Dinner tonight was leftovers.  A lil of this and that.  The next two nights are going to be quick and easy and red meat foods since we will be in turkey and hamville for the rest of the week.

Ham hocks are cured pork bones from the legs. Some meatier than others. Usually inexpensive but big on  flavor when boiled up with beans. Good stuff. We are still working on the parts of Saturdays cook-fest that I didn't freeze. I haven't cooked up anything new. John is saying I need to cook more of the turkey gravy. He is really enjoying that.
