Every fall when we lived in California, we would make an annual trek up to Apple Hill in Placerville, about an hour away from where we lived. We would pick up all kinds of apples and other fall goodies. One weekend I tried this recipe and loved it. Hope you enjoy it as well.
Apple Hill Cake
INGREDIENTS:
2 Cups Sugar
1/2 Cup Oil
2 Eggs
4 Cups dices apples
2 Cups flour
2 teaspoons baking soda
1 teaspoon nutmeg
2 teaspoons cinnamon
1 teaspoon salt
Topping:
3 Cups apple cider
1/2 Cup sugar
1 teaspoon lemon juice
1/2 cup brown sugar
1/4 teaspoon cinnamon
1/4 cube margarine
1/2 teaspoon vanilla
1/4 teaspoon salt
2 heaping Tablespoons corn starch and enough water to make a thin paste.
Directions:
Combine sugar, oil and eggs in a large bowl, stirring until well mixed. Stir in diced apples. Sift together flour, baking soda, nutmeg, cinnamon and salt, then add to bowl. Stir all ingredients together to form a batter (do not over mix). Pour into 9x13- inch greased pan. Bake one hour in a preheated 350 degree over.
To make topping, place all ingredients except corn starch/water mixture. Stir on medium heat until dissolved. Bring to a boil. Add corn starch mix slowly to hot cider mis, stirring constantly until mixture is thick. Remove from heat and pour over apple cake. Serve with ice cream.
