Apple crisp cookies

1  cup flour 
1/2  teaspoon baking soda 
1/2  teaspoon baking powder 
1/2  teaspoon salt 
1/2  teaspoon cinnamon 
1/8  teaspoon nutmeg 
3/4  cup butter 
1/2  cup sugar 
1  egg 
1/2  teaspoon vanilla 
1 1/2-2  cups rolled oats 
1  cup dried apples, Chopped 

Preheat oven to 350*

Cream together butter and sugar until fluffy.

Add vanilla, egg, salt, cinnamon, nutmeg, baking soda and baking powder. Mix until well blended.

Add 1/2 of the flour, mix well. Add rest of flour and 1 1/2 cups oats, again mixing well. If batter seems too loose, add up to 1/2 cup more oats. (I've only had to do this once)

Stir in chopped apples.

Drop by spoonful onto cookie sheet and bake for 10 minutes.

Oh those really look yummy, going to add them to my Christmas Cookie baking list.

Sarah, these sound really good, but I think I would like to try making a few with some
chopped pecans in them!   :idea: Maybe I could do half and half.  I need something else to take for Thanksgiving and these would be great to have around so the kids could munch on them too!   :wink5:  I've noticed that kids are not that interested in the pies,  :smileyNo: but that leaves more for me.   :smile:
