Christmas Cookie Trades

It's that time of year again.  The families in my church exchange cookie plates during December: and this year, I plan to be prepared.

So I need some help deciding which cookies to make and which recipes to use.

I've already decided to make gingerbread men, women and children.  And I have several different recipes to choose from.  What should I be looking for as far as the recipe that will make the most moist, and flavorful cookie?

Here are some other possibilities I'm considering:

Chocolate Mint Cut-Out Cookies
Buried Cherry Cookies
Cocoa Snowflakes
Mexican Wedding Cake (Sinfuls)

If you have some favorite chistmas cookies I'd love to hear from you.

Usually a moist cookie will have a lower sugar content than a dry cookie because as the cookie cools off, the sugar crystallizes and makes a crunchy cookie.  I bake most of my cookies until the tops are just starting to look dry, so that way they don't get over-cooked.
