Hot Artichoke and Spinach Dip

We made this for our Sunday night dinner and it was so good.  Served it with thinly sliced and toasted baguette bread slices that I coated with butter and a bit of Parmesan cheese.  This dip is delightful!

Hot Artichoke and Spinach DipI

·          1 (8 ounce) package cream cheese, softened

·          1/4 cup mayonnaise

·          1/4 cup grated Parmesan cheese

·          1/4 cup grated Romano cheese

·          1 clove garlic, peeled and minced

·          1/2 teaspoon dried basil

·          1/4 teaspoon garlic salt

·          salt and pepper to taste

·          1 (14 ounce) can artichoke hearts, drained and chopped

·          1/2 cup frozen chopped spinach, thawed and drained

·          1/4 cup shredded mozzarella cheese

In a medium bowl, mix together cream cheese, mayonnaise, Parmesan cheese, Romano cheese, garlic, basil, garlic salt, salt and pepper. Gently stir in artichoke hearts and spinach.

Transfer the mixture to the prepared baking dish. Top with mozzarella cheese. Bake in the preheated oven 25 minutes, until bubbly and lightly browned.

That sure sounds yummy.  I've only tried the TGIF kind that is frozen and you microwave to thaw.  This sounds so much better.  Maybe I can talk Dianna into making some, or maybe even make some myself!  :ThumbUp:

It is such an easy recipe, that is why I wanted to share it.  I always thought something like this would be harder than it ended up being.

My cousin in law made a yummy artichoke spinach dip. Not hot though. This sounds very yummy. (too bad Marton wont eat spinach)

Wrennie, I think with the basics of this dip, you could so a bunch of things with it.  Any combination of herbs and veggies would probably be good.

You're right, Triss, there's a lot of different ways to do this.  :wink5:   Actually, I have a recipe that's very basic for those who prefer the taste of the Artichokes and cheese.  It's delicious too, but I'm still wanting to try your recipe because I love spinach and think this will give it a nice touch.   :yesssss: 

Artichoke Dip (Hot)

Ingredients:
2 cans artichoke hearts, drained
1 cup mayonnaise
1 cup freshly shredded Parmesan or Romano cheese
 
Instructions:
To put this together, quarter the artichoke hearts and mix them with the mayonnaise and the shredded cheese.

Put this in a baking dish and bake at 350 degrees F for 20 minutes.  Serve warm with crackers or toast some French Bread slices for dippers.[/b}
