Apple, Pear and Oatmeal Recipes?

I am looking for some good recipes to use with apples or pears and oatmeal.

Here are two I am trying today. I am also going to make oatmeal cookies with apples instead of rasins.

Any suggestions for other things you have tried that are yummy?

OATMEAL APPLE CRISP

1 c. packed brown sugar
3/4 c. unsifted flour
1/4 c. oats
1/2 tsp. cinnamon
1/2 tsp. cloves
1/2 c. butter
6 med. apples
1 tbsp. lemon juice

Heat oven to 350 degrees.
In bowl combine first five ingredients.
With two knives cut in butter until well dispersed.
Peel and cut apples.
Slice into greased baking dish.
Sprinkle with lemon juice.
Scatter sugar mixture over top.
Press down evenly.
Bake for 50 minutes or until nicely browned.

CINNAMON PEAR MUFFINS

1 1/2 c. quick oats
1 c. packed brown sugar
1 tsp. cinnamon
1 tsp. soft butter
1 1/2 c. flour
3 tsp. baking powder
1/2 tsp. salt
1 c. chopped peeled pear (1 lg.)
1 c. milk
1/3 c. melted shortening
1 egg

Combine oats, brown sugar and cinnamon.
Remove 2 1/2 cups to large mixing bowl.
Combine soft butter with remaining oatmeal mixture; set aside.
Stir flour, baking powder, and salt into oatmeal mixture in large bowl.
Stir in pear.
Combine milk, shortening, and egg.
Pour into dry ingredients and mix just until moistened.
Spoon into 12 greased or lined muffin cups filling 1/2 full.
Sprinkle reserved oatmeal mixture over tops.
Bake for 12-15 minutes at 400 degrees.
Serves 12.

Triss, this is a favorite in my house. I add oats to the batter, as well as the strudel topping.

That one looks really good.  I am going to try that today as well.  My only problem today is that I cannot find my 12 cup muffin tin.  I am working with a 6 cup one and quite irritated that I have no clue where the other one is located.  I have torn apart the kitchen.

Ok the cinnamon pear muffins are AWESOME!  I just made a second double batch, they were that good.  Moist and not too sweet.  Perfect!

I ran out to get more brown sugar and also made the kids some cookies today.  I went with oatmeal and instead of raisins I used apples.  Guess I will see how the kids like those.  So of my 15 gallons of fruit, I used 8 pieces of it today.  I think I need bigger recipes.

That looks good.  I have made apple butter in the past and really enjoy it and so do the kids.  I guess pear butter is on my list of things to do tomorrow.

That should use up quite a few.  :grinnnn:

What about overnight oatmeal with apples or pears? Then breakfast is ready in the morning with no work from you...

That would be good but none of my kids like oatmeal.  That is why they get it in things like cookies and muffins.  The cookies turned out really good, they were very thick and soft.  Almost like a really soft granola bar. 

So tomorrow will be the apple crisp recipe above and I think I will try my hand at that pear butter.

mmm That looks easy and good. I might even try this one. Not this weekend, don't have all the ingredients, but after pay day..
