I've made french onion several times, but never have strictly followed any recipe. We like a mix of sweet onions, both reds, yellows and whites. We cook them down long and slow in butter until they carmelize, then add a really good quality beef stock, various herbs, and salt. After it simmers a while, we adjust the flavor to suit us that day.
Make sure to use a good cheese on top!
