Banana Bread (Nuts optional unless the cook is a nut)

1 cup sugar (or Splenda)
2 Tbsp soft shortening (or butter or margarine)
1 cup mashed bananas (I toss in two if big or three if small, no mashing or measuring)
1 egg (med, lge or x-lge)
3/4 cup milk (your choice of breed but no bull?)
3 cups flour
3 1/2 Tsp baking powder
1/2 tsp salt (but I always forget it)
3/4 cup of optional chopped nuts of choice. (it is even good with pistachios, peanuts, etc)

Here is where i splinter off the main thinking. I put the butter, sugar,  egg and nanas (whole) into a largish bowl and let my beaters do the work until smooth (scraping of course). Then start adding the rest of the dry ingredients alternately with milk starting with baking powder sprinkled over the fluffy mass and a cup of flour on top. Stand back if your mixer wants to toss stuff at you and next time use a bigger bowl. fold in nuts if using.
Greased (or sprayed) standard loaf pan for about an hour at 350* until that toothpick is clean enough you may forget it has been used and put it away with the unused ones......

The cook here is definitely nutty... :Wacko:

I can tell that this one would be lots of fun to make. Especially if you don't mind flinging flour all over the kitchen. I may have to give it a try... :good2:

BTW, you can always lick the toothpick clean to put it back... :wink5:

i made this last weekend.  it is really, really good.  and since the cook was a nut, it was full of pecans.  but the cook's husband swore there was nothing nutty about him and insisted that there be some without nuts.  it was good anyway.  he has only had one piece.  the cook on the other hand has eaten a loaf and a half  :Whis:

I made this substituting the splenda 1/1 and it puffed up a little more than usual, But my daughter said it was heavenly.

Cool! My better half loves banana bread. I'll show here this recipe. :)

And since I'm male (and not all there in the head), I do not need extra nuts.
