Well as I'm clearning the brush I'm also clearing some trees and running into a lot of stumps where others have cut down trees.  Most of these stumps are cut level with the ground.  Now my questions is what do I do with the stumps.

Shade plants can be planted among them or I could even hollow out a few with a large drill bit and plant in them.  I've seen that done down the road. 

The biggest problem I've run into is where new growth starts sprouting on some of the stumps.  Is there anyway to stop that?

There are chemicals and things you can put on stumps to help them decay faster. I'm not too sure what they are.
My neighbor had a huge eucalyptus stump that he put his hot coals on after grilling to burn it to stop the regrowth. It still sprouts.  Eucalyptus are notorious for regrowing and we  have a lot of them here. I don't know your answer. But that is something I would call my local county extension and ask about.
