Blueberry Streusel Cake

Blueberry Streusel Cake


2 cups fresh blueberries
1/4 cup sugar

3 cups flour, sifted
2 tsp. sugar
1/2 tsp. salt
1 cup salad oil
4 Tbsp. Milk

Streusel:
1 1/2 cup sugar
4 Tbsp. flour
1/4 tsp. salt
6 Tbsp. butter or margarine

Sprinkle 1/4 cup of sugar over berries; set aside. Mix our, sugar and salt. Combine salad oil and milk in a small bowl and whip with fork. Pour over flour mixture. Mix with fork until moist. Turn into a greased 9x11 inch cake pan. Press dough into pan, building up edges about 1/2 inch deep. Spread berries over the dough.
Streusel: Mix sugar, flour and salt together. Cut in butter until crumbly. Sprinkle over fruit. Bake at 350 degrees for 45 minutes or the top is browned.

Looks like I have done one in peach as well.

I wonder how long it's going to take my blueberry bushes to produce 2 cups of blueberries.  lol.  This looks wonderful and I have added it to my recipe book.

Yes, corn would work.  I used peanut oil in this last batch and it was still good.  No flavor difference at all.

Tammy, you could easily half the recipe.  It made enough for us to have dessert for 2 nights.  It will also work with any fruit.

Me either... I assumed it was oil used in salad dressing.  I used vegetable oil originally and peanut oil this last time.

Ohh I looked it up.  Salad oil is a catch phrase for any vegetable oil that can be used in salad dressing.
