Soo i have a ton of apples..i have thought of doing apple pie filling..already have a bit of applesauce but was wondering what you guys had thoughts on what to do with them... :ScratchHead:

They are falling as we speak..for some reason they think it is fall..they are a summer ripe apple but never this early and they really are not that big this year. Any who before i run away from the apples wondered what you wonderful people ideas where  :Yahoo:

Here you go........  :ThumbUp:

APPLE JAM

12 medium-sized cooking apples, about 4 lbs.
8 c. sugar
1 lemons, rind and juice
3 tbsp. ground ginger
4 whole cloves, tied in cheese cloth

Peel and slice apples. Combine apples, sugar, lemon rind, juice, and spices in a heavy kettle. Heat to boiling, simmer until set, about 2 hours, stirring frequently. Do not add water. Remove from heat. Seal in hot sterilized glasses.
Note: Nice for apple turnovers and/or a spread for gingerbread.

APPLE CHUTNEY

3 lbs. apples
1 cup sugar
1 cup water or apple cider
1/2 tsp. cinnamon or 1 stick
1 2-inch cube fresh ginger
3/4 cup golden or mixed raisins and currants
2 T maple syrup
1 T rum or butterschnapps
fresh lemon juice

Place raisins and/or currants in a small cup with rum and maple syrup. Allow to macerate 20-30 minutes.
Core and peel apples, reserving peels. Chop apples into a 1/2 inch dice. Sprinkle apples with lemon juice or citric acid (Fruit Fresh or Vitamin C tablets that have been crushed to a powder) to prevent browning due to oxidation.

In a saucepan put sugar, water or cider, apple peels, and cinnamon. Bring to a boil for 5 minutes. Turn off heat and strain liquid to remove peels, then return to pan. Add raisin mixture and finely grated and peeled fresh ginger to hot liquid, then add apples and simmer 3 more minutes.

Remove from heat and strain into sterilized jars.

Process 1/2 pints 10 minutes and pints 15 minutes in a boiling water bath or store in refrigerator.

APPLE BARS

1/2 cup shortening
1 c. sugar
2 eggs, beaten
1 c. sifted all-purpose flour
1 tsp. baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 tbsp. cocoa
1 tsp. cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon cloves
1 c. rolled oats
1 1/2 cups diced peeled apples
1/2 cup walnuts, coarsely chopped
Icing sugar

Cream together shortening and sugar until light and fluffy; beat in eggs, one at a time. Sift together dry ingredients, add to creamed mixture. Stir in remaining ingredients, except icing sugar.
Spread into greased 9 in. by 13 in. pan or two 8 in. by 8 in. pans. Bake in moderate oven, 375 degrees Fahrenheit about 25 minutes. Cool slightly, cut into bars or squares. Sprinkle with sifted icing sugar. Makes 36 bars.

Apple Butter................my favorite!!

Ingredients
1 (12 fluid ounce) can frozen apple juice concentrate, thawed
1/2 cup apple cider
4 pounds Macintosh apples - peeled, cored and chopped
3/4 cup dark brown sugar
1 cup apple brandy
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/4 teaspoon ground cloves

Directions

1.In a large saucepan, bring apple juice concentrate, apple cider, and Macintosh apples to a boil. Reduce heat to low. Stirring occasionally, simmer uncovered about 1 hour, until apples are easily mashed.

2.Mix dark brown sugar, apple brandy, cinnamon, ginger, and cloves into the apple mixture. Bring to a boil, reduce heat, and simmer uncovered 2 hours, stirring occasionally, until thickened. Transfer to sealed sterile containers, and cool at least 1 hour before serving.

To post pictures you have to save the to a photo sharing site. Many of us use Photo Bucket. It has some bugs to work out but it isn't the worst site around. And free.
After you get that done someone can walk you through the picture posting part.

Thanks again for all your help!! Making monkey bread as we speak..no apples but making it for my boyfriends work..apples this weekend though! :D Will be batteling them then :duel:

I made these last Fall, and they were soooooo good!!

Apple and Walnut Muffins
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon ground allspice
1/4 teaspoon ground nutmeg
1/4 rounded teaspoon salt
2 large eggs
1 cup plus 2 tablespoons frozen apple juice concentrate, thawed
2/3 cup buttermilk
2 tablespoons oat bran
2 small apples, peeled, cored and chopped (Granny Smiths work well)
1/3 cup chopped walnuts



Preheat oven to 375°.

Mix together flour, baking soda, cinnamon,
ginger, allspice, nutmeg and salt.

Mix together eggs, apple juice, and buttermilk.

Stir flour mixture and oat bran into egg mixture until dry ingredients
are just moistened. Do not overmix.

Gently stir in chopped apples and nuts.

Grease 12 standard size muffin cups or line with cupcake paper liners.

Spoon batter into prepared muffin cups, filling 2/3 full. Bake for about
25 minutes, or until lightly golden and tops spring back when pressed.

Transfer muffin pan to wire rack to cool a bit then turn muffins out on
to rack to cool.

Enjoy these apple muffins as they are, or if you want to get a little
decadent, add a bit of butter.

Apples with peanut butter are yummy! Speaking of peanut butter, I was going to get more White Chocolate Wonderful when I was at Wal-Mart today, but they didn't have it.   They did not have any of the Peanut Butter & Co. peanut butter.  Not even a spot for it.  I was so bummed!  :eek: Hopefully the closest Target didn't do the same.

the other walmart had it today jess.  but only the honey kind.  so i got that.  ellie went to kroger though and got me both chocolate kind and the cinnamon raisin. i figured i'd try it.

waited to long for the apples sooo will be making a trip to the local orchard soon hopefully next week. Then will get working on them!  :Groaner:  Couldnt believe i waited to long lol..oh well.
