I'm making chicken & rice. I've not been feeling well and need something for lunches. Figured I'd make something that should be easy to stomach, though I probably should've gone a little lighter on the pepper.

Cheesy penne pasta, chicken and vegetables all together. A one pot meal. I'm using up veggies from my bin.

I make mine on the stove top. Tonight I used canned chicken (breast meat), but usually I use left over rotisserie chicken, so much more flavorful. I just use condensed cream of chicken soup water and chicken. Season to taste. I do not add any salt whatsoever. I do use my pepper medley I have. You can buy it in the store in the grinder/shaker. I use less when I use rotisserie chicken though. Oh, and I use instant rice. Half and half brown/white. It's easy and it's good (usually). I tried adding in some peas/carrots, but didn't like it. And I like peas and carrots.

i make it in the rice cooker for my dogs too... but i think scott and matthew would enjoy it if it had more flavor.  the dogs don't get any seasoning.  not even pepper...

Thought I'd Share this simple dish with yall. Just saw on TV yesterday. Haven't tried it yet. And if ya gonna make dog food, make sure ya get the turkey dogs. Vet says regular hot dogs are bad for doggies.

From Larry The Cable Guy:

Beanie Weenie Cornbread Casserole

INGREDIENTS:
1 package (16 oz) all-meat hot dogs

3 cans (15-1/2 oz) pork & beans, drained

1/3 cup bottled barbecue sauce

2 tablespoons light-brown sugar

1 package (8.5 oz) corn bread mix (such as Jiffy)

1/3 cup milk

1 egg


DIRECTIONS:
Heat oven to 350 degrees.

Coat a 13X9 inch baking dish with nonstick cooking spray.

Heat a large nonstick skillet over medium-high heat.

Add the hot dogs and cook about 3 minutes per side until nicely browned.

Remove to a cutting board and cut into 1/2-inch pieces on the bias.

In a large bowl, mix together hot dogs, beans, barbecue sauce and brown sugar.

Spoon into the prepared baking dish.

Prepare corn bread following package directions, using milk and egg.

Spread evenly over the top of the casserole. Bake for 45 minutes or until bubbly.

Allow to cool slightly before serving.

I can deal with beanie weenies, but not the Jiffy cornbread in it. To me the Jiffy tastes like a cake... :giggle:

I don't do cake cornbread, but my kids love the Jiffy mix... :razberry:

I was going to fix a chicken casserole for supper tonight, but we ended up eating some leftover hot dogs and hamburgers. I will be freezing the rest for pup treats now...:)

We are having chicken casserole. :licklips: Was going to make it yesterday, but thought we should use up some of the leftovers from Saturday first.

Well, I tucked a pot roast into the crock with an onion and carrots. I will decide how to serve it up later. It is too hot to stand over a hot wok or even to chop veggies for a stir-fry tonight.
