My Ranch Chicken

7-10 Chicken pieces, wet.   My favorite is thighs for this. But it works with almost any parts.
A packet of ranch dressing/dip
1 1/2 cups Bread crumbs or flour or any combo that you may have to coat.
oil or grease to coat baking dish.

Preheat oven to 350*

1. Toss ranch mix and your chosen coating mix into a bag, shake to mix.
2. Toss in wet chicken pieces (water works, milk browns a little quicker)
3. Shake to coat ( I do this in batches)
4. Place in greased baking dish, skin side up.
5. Bake uncovered at 350* for about 45 minutes. I check to see if there is undone coating left on top of pieces and baste those with the pan drippings at this time.
6. Turn oven up to 375* and continue baking until tops are browned and crispy. Between 15 and 30 minutes if your oven is uneven as is mine.

Last night I only had about half the panko crumbs that I needed so I tossed in flour. It makes for a good basic coating. The bottoms of the chicken to not retain the coating well. but the top, skin part is crispy and delicious.
You could remove the chicken and pour off most of the drippings and continue to make some pretty good (chunky) gravy from what is left in the pan. I cooked mine in my iron skillet but didn't really need gravy for anything.
You can also add pepper to the coating mix like I did. 
I love simple things with simple ingredients that cook themselves without a lot of attention.

Sounds Yummy. Wonder how it would work with French Onion Dip? My SwampMan will not eat Ranch.

It will work well with the french onion soup. I am not sure how well those dried onion bits will adhere.
