Got this from Cook's Country and it's yummy.
Thin, bone in pork chops.
Beef stock - enough to barely cover chops while baking
Olive oil for browning chops and caramelizing onions
1 medium onion cut however you like your onions
Thyme (optional)
Flour - enough to cover both sides of pork chops
Pepper to taste
Put small amount of olive oil in pan - cook onions until they just start turning brown - you don't want to leave them transluscent
Remove onions and set aside
Flour chops on both sides and brown in same pan (may need a tad more oil)-pepper here to taste
Place onions in baking dish
Place floured, browned chops on top of onions
Add few springs of thyme
Barely cover with beef stock
Cook uncovered at 300 degrees for 1 hours 15 minutes or until chops are fork tender
When the chops were finished I removed them and added a little flour mixed with water to the stock left in the baking dish and stirred it in good, then returned the baking dish to the oven and let it cook to make a thicker gravy.
