Baby steps to better foods #1 ............part 2
« on: Mar 26, 2010, 07:25:02 PM »
I'll post three baby steps at a time, and we can all work on them together and post our comments, progress and questions.

The first three baby steps:

1. Switch the fats you use to a more traditional fat- coconut oil, lard, butter, tallow, ghee, palm oil, olive oil.

2. Eat fruits and vegetables that are in season for this month.

3. Move to consuming the best quality dairy that you can find &/or afford. This includes kefir, yogurt and other cultured products.

1. Mike found a great deal on coconut oil, so I will be using a lot more of it.

2. I'm working on adding easy recipes to my stash that use veggies, as well as adding at least one extra veggie to whatever I'm cooking.

3. I had Mike grab a bottle of kefir, and we tried it with lunch. Not bad! It's thick, like a smoothie, with a slight fizz and yogurt taste.

Here it's with the yogurt, in things that look like milk bottles.

Something else to keep in mine with cattle. They stink. You want to have a place far away from the house to keep them. I have a friend that have a couple of cows/bulls. And that is her biggest complaint. And they have 20 acres. She made her hubby fence off the end furthest from the house to keep them. lol

True. Cow poo is wet. Goat poo is dry pellets...and they still manage to get funky. I give them baths. I HATE the goat smell...you know, like a buck? Gag. The girls aren't to bad, unless they are in heat. And, if they had been dehorned, they wouldn't smell.

Really?  Does that work for bulls too (the dehorning)?

I'm not sure I've ever smelled a bull. The scent glands on the goats are at the base of their horns, so they get burned off when the horns do.

You are welcome Sheri...I've tried and like the maple one...I've got the other on the list to try soon.

Same here Sarah, i want to start adding more veggies to whatever i cook, for instance, when i made some spaghetti sauce the other day, to the usual pepper, mushrooms, meat and spices, i added shredded carrots, and it tasted pretty good.
I want toi start adding zucchini and more squash to our diet too.

Penny.......   Good job adding veggies! I plan to freeze a bunch more squashes this year.

Sheri........ As far as cerals go, that is a good one.

I tried a new-to-me side dish last night. I cooked wheat berries in chicken stock, and quickly caramelized some frozen sweet potato cubes in butter, added the wheat and about a Tbsp. of real maple syrup. Wow! It was really really good. Sweet, but only a bit. Nice texture. This one goes on my favorites list.

Me too Sarah, more squash, eggplant and zucchini.......and of course, peppers and tomatoes.

The beans and peas never seem to make it to the freezer.....maybe this year.

So, after my breakfast of doughnuts  :Whis:  I had a mexican themed salad for lunch, using the last of the sprouted pinto beans, corn, other veggies, home canned salsa and cultured sour cream dressing. A little better.   Dinner will be leftovers of the wheat/sweet potato dish and a smoothie.

Speaking of maple syrup, I heard on NPR yesterday and it and walnuts helps the cancer cells that cause prostate cancer to grow slower than if a person doesn't eat them.  If men live long lives they are all destined to get prostate cancer to some degree.  Eating maple syrup and walnuts makes it grow slowly.

Walnuts and almonds are good about lowering the bad cholesterol in your body, also, from what I have read... :grinnnn:

Don't know about grandpa Larry but there is a clinical adage that states that all men are destined to get prostate cancer if they live long enough.  Maybe the rest of Larry was in really bad shape or maybe he liked walnuts or had pancakes for breakfast everyday.

I have not been able to eat the yogurt yet.  I'll look at it again tomorrow.
